Ingredients 1 cup dried Black Eyed Peas 1 lb. Fresh Kale, chopped 1 cup dried Bulgar Wheat 1 lb. Onions 3 Tbsp. Olive Oil Salt and Pepper, to taste
Fill a large soup pot 2/3 of the way full with water. Add the black eyed peas and bring to a boil. (I caramelized the onions while the beans were cooking.) After an hour add the kale, and simmer for about 10 min. Add the bulgar wheat, and simmer for another 10 min. Remove from heat and drain off excess liquid, and place in a large bowl filled with paper towels. Remove the paper towels and toss with olive oil, salt and pepper. Top with caramelized onions, and serve. This recipe makes an enormous amount of sleek, but you can freeze the kale, black eyed pea, and bulgar wheat mixture in airtight containers for future use.
